BUTTERMILK BISCUITS
1 stick frozen butter
2-1/2 cups self-rising flour
1 tsp salt
1 cup buttermilk
1 egg for egg wash
Preheat oven to 450 deg.
Grate the frozen butter into a large bowl. Add the self-rising flour and salt to the bowl. Gently toss the flour, salt and grated frozen butter together to combine. Place in the freezer for about 5 minutes to make sure the butter is COLD. After 5 minutes, remove the flour mixture from the freezer and add the buttermilk.
Gently mix everything together until combined. If needed, add additional buttermilk to create a soft dough. Flour your work surface and gently roll the dough mass into a 10x12 rectangle. Fold the dough into thirds like your would fold a piece of paper in thirds. Rotate the dough a quarter turn clockwise and repeat four times. Roll the dough about ½-inch thick and cut into rounds. Place the cut biscuits onto a greased baking dish or cookie sheet.
Whisk the egg and brush the egg on top to ensure the biscuits turn golden brown. Bake in the preheated oven for about 10 - 12 minutes or until golden.
